I have always loved the traditional cooked tomato basil soup. So, I thought I would create a raw version and this is what I came up with. It has all the same elements of the cooked version and you can even blend it for a few minutes in your Vitamix if you want it slightly warmed. Otherwise it makes a great summer soup at room temperature or chilled.
Ingredients:
2 cups chopped roma tomatoes
1/4 cup of fresh basil chopped
2 teaspoons dried oregano
1/2 cup sun-dried tomatoes (soaked for 1-2 hours)
2 medjool dates pitted and soaked (soaked 2 hours)
2 large cloves garlic or 3 small cloves
pinch of cayenne
sea salt to taste
1-cup almond milk
